Server
We're looking for an experienced, energetic server to join the Lost Colony team!
POSITION REQUIREMENTS
Ability to serve with a genuine smile, adjust on the fly, and always execute at the highest standards of excellence.

In this position, you'll be required to:
- Greet guests in a welcoming fashion, serving with a friendly and helpful demeanor
- Know the menus well, including how to best serve guests' dietary restrictions and accurately answering all food preparation questions
- Transmits orders to bar and kitchen by recording guests’ selections and identifying all special dietary needs and special requests
- Assist in preparations as needed or as directed, and always look for opportunities to assist your colleagues
- Remain professional and welcoming at ALL times
- Responds to additional guest requirements by inquiring of needs and observing dining process
- Maintains table setting by removing courses as completed, replenishing utensils, refilling water glasses, and being alert to spills or other guest needs
- Concludes dining experience by acknowledging the guests, thanking them, and inviting them back
- Work calmly and effectively under pressure
- Must be able to work flexible shifts and schedules as required, including weekends and some holidays
EDUCATION & EXPERIENCE
- Age: Must be at least 18 years of age based upon state requirements to serve alcohol
- Service Experience: Minimum one year experience as a server required
- Minimum Education: High school diploma or GED
- Familiarity with industry best practices

- Communication: The ability to write and speak effectively and clearly, actively listen to others, ask questions to verify understanding, and always do so with a smile and helpful attitude

FOH Manager

In this position, you'll be required to:
- Lead by example, and set the standard by which all other employees learn and follow. Lead out in prep periods and take responsibility of staff, cleanliness, preparation, and guest satisfaction at every level
- Be keenly aware of the little things, always on the lookout for ways to improve the experience, ambiance, and satisfaction for guests as well as staff. From bathroom cleanliness to the almost imperceptible conveniences, it's your mission to leave no stone unturned in providing exceptional experiences.
- Greet guests in a welcoming fashion, engaging with guests in a clear, helpful, genuinely caring manner
- Manage staff and assisting wherever needed; this is a hands-on, lead-by-example role
- Know all menus by heart, and serve as well if not better than the highest quality member of your team, utilizing your additional experience and maturity to lead out in this capacity
- Maintain an enthusiastic, welcoming disposition that's focused on prompt service and complete guest satisfaction
- Execute all paperwork, scheduling, and team management as required by role
- Learn and master all computer and administrative duties, ordering, stocking, and inventory levels and quality as required

Qualifications
COMPUTER SKILLS
- Basic computer skills required. Microsoft Excel, Microsoft Word, and Gmail experience required.
- Experience with Aloha preferred but not required.
EDUCATION & EXPERIENCE
- Must be at least 21 years of age.
- At least three years of restaurant experience required, fine dining experience is preferred.
- Basic knowledge of cooking techniques is preferred.
- Basic knowledge and experience of inventory management.
LANGUAGE/MATH/REASONING ABILITY
- Must have problem solving abilities, be self-motivated, and organized.
- Must be able to communicate effectively with guests and employees.
- Basic math skill proficiency.
- Bilingual required (English and Spanish).
Bartender
We're looking for an experienced, energetic bartender to join the Lost Colony team!
POSITION REQUIREMENTS

- Greet guests that arrive at the bar or bar areas in a prompt and welcoming fashion, serving each and every guest with a friendly and helpful demeanor
- Take orders promptly and accurately
- Have complete knowledge of our bar products and ingredients, with ability to explain our products to guests
- Ability to prepare all drinks unassisted in a timely and accurate fashion
- Know the food menus well as well, including how to best serve guests' dietary restrictions and accurately answering all food preparation questions

We're looking for an experienced, energetic host or hostess to join the Hugo's Lost Colony team!

- Open and hold doors for guests whenever possible
- Know the restaurant layout and menu well, in order to answer any questions guests may have upon arrival
- Quickly identify ideal seating placements, as determined by guest preferences and space availability
- Guide guests to their table and present menus
- Receive and take phone calls
- Know and understand our service and kitchen software
- Maintain orderly and clean front of house
- Conclude dining experience by acknowledging the guests as they make their exist, thanking them, and if possible, holding the doors for them
- Must be able to work flexible shifts and schedules as required, including weekends and some holidays
EDUCATION & EXPERIENCE
- Age: Must be at least 16 years of age
- Experience: One year minimum experience in front-facing service industry, restaurant experience preferred
- Familiarity with industry best practices
